Founded in 2013 to improve industry standards, today we’re Australia’s largest farmer of Sydney Rock Oysters and largest processor of food grade Rock and Pacific oysters. We’re committed to sustainable practices and being Australia’s leading oyster custodians ensuring the highest standards from farm to fork. With seven fully integrated farms along the NSW coastline and sourcing from more than 40 independent NSW farmers as well as from oyster farms in Tasmania and South Australia, we offer a consistent supply of Rock and Pacific oysters year-round.

I’ve worked with Australia’s Oyster Coast for five years at our Merimbula farm. When I started, all I knew about oysters was that I loved to eat them. Now, I love to grow them. Through hard work, study and the diverse opportunities AOC provides, I’ve grown into a manager’s position. AOC strives to create a better, safer and more enjoyable workplace, and it’s easy to forget you’re at work when you’re surrounded by the diversity of the estuary every day.

I joined the team 3 years ago and, since then, I've been providing IT solutions for all aspects of this quite diverse and distributed organisation. Requirements such as farm management, provision of IT in remote locations, logistics management, factory management, inventory tracking and compliance have all been tackled by my small team in this time. It has been great to work for an organisation with a genuine commitment to innovation in its goal to constantly raise the bar as leader in our industry. I joined AOC as their Operational Compliance Lead after a long career in the Fisheries and Marine compliance field within State Government regulatory agencies. The step across to private industry was a breath of fresh air, particularly working with a team of highly motivated individuals in a company leading the way in NSW aquaculture industry. The dynamic nature of AOC’s operations allowed for diversity in the role and an opportunity to constantly build and improve all operational aspects of the business. Never a dull moment.
